First of all, I signed up for Rev3. I mentioned that I was planning on it, but I officially pulled the trigger. On November 10th I’ll be racing 70.3 miles in Venice, Florida!
I’ve been trying to cook less with intricate recipes that I usually turn to. Instead I’m trying to put together dishes that require only a few ingredients and less time to prep. It helps in the process of working, working out, and then having dinner prepared. In the last couple weeks a few of the meals I’ve made included fish tacos with homemade guac, cauliflower pizza (with this crust), and English muffin pizzas. This plan has worked out well, and as long as I keep the focus on simple I should be able to maintain having a homemade dinner ready each night.
I also received exciting news in the form of a race ambassadorship! I received an email this week alerting me that I’d been picked as an Ambassador for Zooma Florida!
I applied on a whim and was thrilled to open that email! I’m excited to
join a fun group of girls up at the Ritz Carlton in Amelia Island on
January 18, 2014 to run a new-to-me race!
a 5k and a half marathon option, and I’ve already registered and opted
for the half marathon. I’m looking forward to cool weather (after a
blazing Florida summer) and a potential post marathon PR! We shall see
how that goes.
