After the Color Run on Saturday, there was plenty more fun and color in store for the weekend. Saturday night Tim and I celebrated his 30th birthday with some of his closest friends (that have now become some of my close friends) at Cantina Laredo in New Tampa. It’s a more upscale Mexican restaurant that has the ambiance and noise level that we were looking for for a big occasion!
Tim enjoyed several drinks, a meal that he loved, and much deserved time with friends. It was a wonderful night that ended with Tim’s goofy chatter after just enough beverages. I love him! When we got home we indulged in a couple of the Crumbs cupcakes my mom had sent Tim as a birthday present.
After we headed home and had out cupcakes, I went to sleep, because I had a world of baking to do the next morning. There was another cookie exchange I’d known about since November, but my love of procrastination got the best of me, so I waited until the last minute again! This cookie exchange was with the Tampa Bay Lady Bloggers, and I wanted to make sure my cookies were pretty for the photos they’re probably end up in.
I decided on Red Velvet Cookie with Cream Cheese Swirl. These cookies weren’t hard to make, but I’m making a public declaration that I will never open a bakery for the good of the world because of the difficulty I had with them. I went to the store to grab ingredients, didn’t have enough stuff but thought it’d be okay, burned a batch, went back to the store to get more ingredients, then finally baked enough cookies for the swap.
